Weekends are fantastic!!! I love that all week we work hard at school and work and then Friday night comes and all of the cares go away for a few short days and it is time to play and enjoy having fun and making memories.
The weather this weekend was fabulous so Andrew and I decided to give my parents a break and take the kids for a bit. We decided to go miniture golfing. How hard could that be??? Man who knew that little kids were so good at things like this??? But it was super fun and I am already counting down the days till next weekend..... only 5 more to go!!!

Valentines Weekend

So this weekend was full of adventure. I saw the new movie, Confessions of a Shopaholic, cute, definate chick flick and made me want to go spend a little money.... ;) I braved the snow and made the 35 min drive to go and spend time with my cute Valentine. He is adorable, I am not sure how I got so lucky. He gave me some flowers and not one, or two, but three cards. All said things that are inside jokes to us and what he wanted to say, he is so sweet! We went to Olive Garden for lunch, and after waiting an hour got some great food, and my dear boy pulled out all of the stops, telling me I could have whatever I wanted. After we just took it easy and did some shopping, watched a movie, and took a nice nap. We then ventured down to my friends wedding reception and then my roommates V-day party. Man we had a little too much fun there...
Sunday we spent the day together going to church, visiting my Grandparents, some of our friends and walking around temple square. I am sad that my camera died when we finally got to the tmeple, so I told him we have to go back again and take more pics. He is cute and totally agreed.
Pretty sure my boyfriend is amazing, he treats me like a princess, and makes me feel so loved. He is absolutely adorable, gets along great with my friends and family and is so willing to please and do anything that he can do to help me.
I know that many people dont like Valentines Day becauase it is a day for those that have someone, and I totally understand that. I am thankful for a boy that cares about me and is willing to do anything for me. I hope that every girl can find a guy like him. I hope everyone had a good weekend!!

So for the Superbowl I was asked to bring a sweet treat to our little party. Little did I know they would be such a big hit. Peanut butter and chocolate, two essential sweet treats put together is divine! My boyfriend couldnt get enough and I have had requests to make more. So here is the recipe. Magic in the Middle Cookies
These chocolate cookies have a surprise in the middle... a peanut butter surprise. Yum! I saw these on My Kitchen Cafe and had to give them a try. They are super fun if you are needing a change from good ol' chocolate chip. This recipe is a bit more time consuming than the average cookie though- so for me it will be reserved for a special treat! Enjoy! (..and don't over bake)

Chocolate Dough
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup granulated sugar (plus extra for dredging)
1/2 cup brown sugar
1/2 cup (1 stick) butter, softened
1/4 cup smooth peanut butter
1 teaspoon vanilla extract
1 large egg plus 1 large egg yolk

Peanut butter filling
3/4 cup peanut butter, crunchy or smooth, your choice
3/4 cup confectioners' sugar

1. Preheat the oven to 375°F. To make the dough: In a medium-sized bowl, whisk together the flour, cocoa, baking soda and salt. In another medium-sized mixing bowl, beat together the sugars, butter, and peanut butter until light and fluffy. Add the vanilla and the egg, beating to combine, then stir in the dry ingredients, blending well.

2. To make the filling: In a small bowl, stir together the peanut butter and confectioners sugar until smooth. With floured hands or a teaspoon scoop, roll the filling into 26 one-inch balls.

3. To shape the cookies: Scoop 1 tablespoon of the dough (a lump about the size of a walnut), make an indentation in the center with your finger and place one of the peanut butter balls into the indentation. (I thought it was easiest to just separate the dough into 26 pieces like the filling so I didn't run out or have lots of leftovers.) Bring the cookie dough up and over the filling, pressing the edges together cover the center; roll the cookie in the palms of your hand to smooth it out. Repeat with the remaining dough and filling.

4. Roll each rounded cookie in granulated sugar, and place on the prepared baking sheets, leaving about 2 inches between cookies. Use the bottom of a drinking glassto flatten each cookie to about 1/2-inch thick.

5. Bake the cookies for 7 to 9 minutes, or until they're set and you can smell chocolate. Remove them from the oven, and cool on a rack.

What a week it has been. I seem to never be able to fully catch up and it is killing me! I used to be good at staying on top of my assignments etc at school but this semester it has seemed to all go out the window. I get so frustrated about it sometimes and just dont really know what to do to fix it all. I wonder if I will ever feel in control again.
On a happier note, my weekend was good. I got to spend most of it with my "boy toy" as my friends like to call him. He moved this last week so I helpd him put his house together, or at least tried to get rid of some of the boxes. We went over to one of our friend's house and had a little superbowl party. Sadly our team lost but we had some really good food and enjoyed just hanging out.
I guess there is always going to be bad that comes, but as long as you try and focus on the good, everything should work out right? :) Keep Smilin.
